savoury plum jam

plum
1kg plums (stoned weight)
750g sugar
300ml warm water (don’t use this if you are using frozen plums)
25g finely chopped stem ginger

Halve or quarter fruit, remove stones. Put all ingredients into a heavy bottomed pan. Stir and leave to stand for an hour. Warm mixture slowly and stir regularly for first 10 minutes. Turn the heat up, keep stirring until setting point is reached. Pour into sterilised jars.
