recently i went back to the UK and consumed a bottle of cordial from my friend’s fridge, very nice it was too…..
i can do that myself i thought, so i did, minus the fancy label it tastes exactly the same, i tripled the quantities
1 piece fresh ginger about three inches/8cm
240ml litres water
rind of one lemon
50ml lemon juice
Peel and grate the ginger. Place the grated ginger, water, sugar and lemon rind in a saucepan and bring to the boil.
Stir to make sure all the sugar dissolves. Turn off the heat, put the lid on the saucepan and leave over night.
The next morning, strain the ginger liquid through a muslin cloth over a strainer, sitting in a jug. I added the lemon after the event and didn’t actually use most of it, it didn’t need it
Pour the ginger cordial into clean bottles and store it in the fridge.
