chocolate dipped walnut biscuits

choc and walnut biscuits

100g unsalted butter, softened
100g caster sugar
2 1/2 teaspoons vanilla sugar
200g plain flour
1 teaspoon baking powder
4 teaspoons milk
50g cooking chocolate, chopped
50g walnuts, chopped
200g melted chocolate (optional)

Preheat oven to 180 C / Gas 4 and line baking trays with parchment.
Cream butter, caster sugar and vanilla sugar in a bowl. In a separate bowl mix flour, baking powder, chocolate and walnuts. Add the dry ingredients together with the milk to the butter mixture and knead, until smooth. Place dough into the fridge for about 30 minutes to an hour. Roll nut-sized balls from the chilled dough and place onto the baking trays. Do not flatten. Bake for 20 to 22 minutes in the preheated oven. Let biscuits cool on a cooling rack. Once cool, if desired dip the biscuits halfway into melted chocolate. Place on a sheet of parchment or greaseproof paper, until chocolate is set
