Fajitas

As you will notice this blog is often only about cooking, that’s ok, it’s hand-made right?

Another thing we can’t get here is anything mexican, which is fine, we are living in Portugal after-all but unlike Asda, there is no foreign food aisle in the supermarket, so it’s make it up time again. I’ve been making my own fajita spice mix for ages, we are sometimes lucky enough to have friends that bring us tortilla wraps and taco shells from the UK, if not I have to try and make these myself too….., if you’re feeling like it, make your own fajita mix

2 teaspoons chilli powder
1 teaspoon salt
1 teaspoon paprika
1 teaspoon sugar
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
1/4 teaspoon cayenne pepper
1/4 teaspoon cumin

I make alot of this so I always have it and don’t have to faff around mixing it all up each time, just keep it in a re-sealable container or bag

It’s a great mix even without the wraps etc. I mostly do chicken fajitas, but sometimes just a plain veggie option, I serve with roasted potato wedges, limey yogurt dip

 

guacamole and sometimes refried black beans

    Worth storing any spice mix left over in the fridge, it lasts longer that way.
