Chocolate and Coconut Weetabix Slice

one of the good things about being an expat is that other expats come and go and when they go they give you all their perishable food stuffs …..usually just store cupboard stuff like pasta, rice, sugar, flour etc. but sometimes, just sometimes we come up trumps and this week we inherited a giant box of weetabix, whoohoo i hear you cry, well it is for me, there are loads of things that a) you can’t get here and b) you just can’t afford to buy and boxed cereal is one of them.

And I love weetabix, with fresh milk and brown sugar………..

However, fresh milk is hard to come buy and is a drive away which is more petrol, more petrol that we don’t have. So whilst I am waiting for the fresh milk to turn up or me to drive to the fresh milk I decided to make these little gems……very childish I know but sometimes you’ve just got to do it, if only to see what they are like

150g self-raising flour
85g dessicated coconut
140g soft brown sugar
3 Weetabix, crushed
125g butter, melted

For the icing
200g dark chocolate
30g butter
dessicated coconut

Line a shallow cake tin with non-stick baking paper.
In a large bowl, combine flour, coconut, sugar and Weetabix.
Make a well in the centre and add melted butter.
Stir with a wooden spoon.
Press mixture firmly into the prepared tin.
Bake 20 minutes.
Remove from oven and stand to cool for 10 minutes before icing

Stir chocolate and butter in a small saucepan over low heat until melted.
Spread over the warm slice, smoothing with a spatula. Sprinkle with extra coconut.
Allow icing to set and cool down before cutting into squares.
